Introduction

Number of Servings: 8

Ingredients

    2 (8 oz) plain yogurt
    2 Cucumbers - Peeled, seeded & diced
    2 Tbsp Olive oil
    1/2 Lemon juiced
    Salt & pepper to taste
    3-5 sprigs of fresh dill (to taste)
    3-4 cloves of garlic - peeled (to taste)

Directions

In food processor or blender combine cucumber, olive oil, lemon juice, salt/pepper, dill & garlic - mix together and then fold into the yogurt until well mixed. (Folding the mix into yogurt prevents the yogurt from breaking down & causing the Tzatziki to be runny). Cover & refrigerate for at least one hour for the flavors to combine.

* Some people strain their yogurt over night in cheese cloth & others dice & completely dry cucumbers with papertowels - both to remove access water.

    I've loved Tzatziki since visiting Greece and this recipe tastes just the same! I use coffee filters to drain my yogurt over night, instead of cheese cloth, and also use paper towel to dry out the cucumbers a little. Great recipe, thanks for sharing! - 7/8/09
