Delicious way to sneak in bran and pumpkin Delicious way to sneak in bran and pumpkin
Number of Servings: 24


    2 c Wheat bran
    1/2 c milk(I used skim)
    3 eggs
    3/4 cup butter(unsalted) melted
    2 c pumpkin (not pie mix)
    1 c wheat flour
    1.5 c white flour
    1 cup sugar
    1/2 c brown sugar
    1/3 cup maple syrup
    1.5 tsp pumpkin pie spice
    1.5 tsp baking powder
    1 tsp baking soda


Mix Bran, milk and eggs and let sit 5 mins
Mix in pumpkin and melted butter
Mix in dry ingredients
In a 325 degree oven bake for 1 hour
Makes 24 muffins or 12 muffins and a loaf of bread(cook a little longer for bread)
