Ingredients

4 medium scallions, chopped
1/4 cup chopped cilantro
1 Tbsp chopped canned chipotle chili in adobo sauce
2 tsp fresh lime juice
22oz fresh salmon fillet, cut into 1 inch chunks
Mayonnaise:
3 Tbsp light mayonnaise
1 Tbsp chopped fresh cilantro
1/8 tsp grated lime zest
4 hamburger buns
baby lettuce
Directions
To prepare mayonnaise stir together mayonnaise, cilantro and lime zest and place in refrigerator.
To prepare bugers, place onions, cilantro, chipotle, and lime juice in processor and pulse until finely chopped. Add salmon and pulse until salmon is coarsley ground and mixture is well combined.
Divede salmon mixture into 4 equal portions. Shape each portion into a burger and place on a plate and put in the fridge to chill for 30 minutes.
Heat a grill pan, coated with cooking spray, over medium heat, (burgers are too soft to be grilled on a traditional grill). Add patties to the pan and cook for 6 minutes on each side.
To build the burgers place one patty on each bun. Top patty with one pineapple ring, baby lettuce, and mayonnaise mixture.
