Ingredients

    2 cups fat-free, low soduim chicken broth



    1 tablespoon olive oil



    11/2 teaspoon Ground cinnamon



    1 teaspoon ground cumin




    3/4 teaspoon ground ginger




    3/4 teaspoon ground cumin




    3/4 teaspoon turmeric




    1/2 teaspoon of salt




    1 cup quick cooking whole wheat couscous




    Black pepper to taste




    Zest and juice of one small lemon




    1 can (15.5) chickpeas-rinsed, drained and patted dry




    4 green onions-thinly sliced




    1 carrot - roughly grated




    1 red pepper-chopped




    1/2 cup raisins




    1/3 cup walnuts





    1/4 cup parsley-chopped




    1 lb cooked skinless chicken breast- sliced





    2.5 cups of lettuce greens

Directions

1.Bring the chicken broth, olive oil, and spices to a boil in medium saucepan. Stir in couscous, lower heat and cook gently for about 5 minutes-until all the liquid is absorbed. Remove pot from heat, cover and let sit 5 minutes.


2. Arrange salad greens on large serving plate and put couscous over greens and season to taste with salt and pepper. Add the remaining ingredients and top with chicken. Serve immediately.
