Number of Servings: 12

Ingredients

    3 cups wheat flour
    1 tsp baking powder
    1 tsp baking soda
    Pinch of salt
    1 cup mashed pumpkin
    2 tbsp oil
    1 egg white
    1/2 c soy milk
    2 tbsp sugar

Directions

1. Preheat oven to 200degrees C. Mix together pumpkin, egg, oil, sugar, and milk.
2. In another bowl, combine flour, baking powder, baking soda, and salt. Then add this to the wet ingredients and stir. No need to over-stir, 10 or 12 strokes should be fine, otherwise the mixture becomes stiff.
3. Divide mixture into twelve and place on a baking tray with parchment. Bake for 15 minutes.
These scones freeze really well. Just wait until they are cool cut them lengthwise in half, and stick them in a plastic bag in the freezer. When you want one, pop it in the toaster.

    I tried this recipe as stated and felt the scones were missing some spice. I think next time I will add pumpkin pie spice to the mix to add a little something. Very easy to make! - 6/28/09
