Introduction

I slightly modified this recipe from Everyday Food magazine. It is delicious and goes really well with fish. I like to add fresh dill to it which wasn't in the original recipe. Ingredients

    3 lbs baby red potatoes
    1/4 cup of Extra Virgin Olive Oil
    2 tsp of lemon zest (I used fresh)
    1 TB kosher salt
    2 TB dill, chopped

Directions

Makes about 8 servings

Boil or steam the potatoes. While potatoes are boiling, zest a lemon and add to 1/4 cup of EVOO. Add dill. Let sit. When potatoes are soft, smash them with a masher or large spoon just so they burst. Pour oil mixture over potatoes, add salt, and stir to incorporate. Add more salt or dill to taste.

Serve hot!
