Introduction

Very spicey, but very satisfying and easy recipe we received from a friend in Guyana. It is not a pretty dish and also rather pungent (we cook it outside on our BBQ's burner) but very filling for not a lot of calories. Ingredients

    3 medium onions
    1 lb chicken pieces, no skin
    3 large potatoes
    3 tblsp Madaras Curry Powder
    1 cup water
    4 tblsp olive oil

Directions

Cut potatoes, onions and chicken into bite-size pieces.
Heat oil in large pan. Add potatoes and onions and sautee until onions are soft.
Add curry powder and chicken. Cook until chicken is cooked through. Add cup of water and cover to finish cokking potatoes. Serve when most of water is absorbed and potatoes are soft.
