Ingredients

    chicken
    lime
    onion
    jalapeno
    tomato
    salsa verde (green salsa)
    canola oil

Directions

makes 8 servings. Bake chicken in the oven for about 45 minutes. Dice 1 cup onion, 1 jalapeno pepper, and 1 medium tomato. Saute the vegetable in 1 tbsp canola oil. Pull breasts apart once they are out of the oven and cooled. Put the chicken in with the vegetables, add salsa and lime juice, and cook for about 15 minutes on high heat. This dish is great with corn tortillas and refried beans. If you find it too spice drizzle more lime juice over individual tacos.

    I guess the corn tortillas and refried beans are not included in the nurtitional info. They add a lot of calories, carbs, and sodium to this dish. - 1/31/13
