A delicious, moist alternative to your standard ground beef meatloaf. This recipe can also be used to make meatballs.The recipe makes enough for 16 servings in 8 mini loaves. I make all 8 mini loaves at once but only cook 4, freezing the rest for an easy meal later.

Ingredients

3 lb ground turkey
1 medium onion, finely diced
1 large egg
1/2 cup liquid egg whites
3/4 cup progresso italian breadcrumbs
1.5 oz romano grated cheese (a little over 1/4 cup)
1 T Garlic Powder
1/2 T Onion Powder
1 T Oregano
1 T Black Pepper
Tips
Freeze the rest of the mixture into two quart-sized freezer bags. Once the bags are filled and sealed, run your finger down the middle of each bag to separate into two easier to thaw (and cook) mini loaves per bag.
Directions
Combine all ingredients in a large bowl. (Tip: slowly add in the breadcrumbs, cheese, and spices to distribute evenly.)
Form half of the mixture into into 4 mini loaves and place in a pan that has been sprayed with cooking spray.
Bake at 350 degrees for approximately 30 - 45 minutes or until cooked through. Check after 30 minutes.
Makes a total of 16 servings, or half a mini loaf each.
