Introduction

This is a simple and delicious recipe that I have been cooking my whole life. I love it and I am not usually a salmon eater. This is a simple and delicious recipe that I have been cooking my whole life. I love it and I am not usually a salmon eater.
Number of Servings: 8

Ingredients

    2 cups white long grain rice
    1/2 cup cooked frozen peas
    2 Tblsp margerine
    2 Tblsp plain flour
    2 cups whole milk
    250g can of pink salmon
    300g can of asparagus cuts
    200g light tasty cheese grated
    1/2 cup breadcrumbs

Directions

1. place rice into rice cooker or saucepan to cook.
2. once cooked press rice into base of large baking dish (ceramic)
3. sprinkle peas over the top of the rice
4. prepare a white sauce using the magerine, flour and milk (first melt margerine, then add flour stirring over heat till combined to a paste, then add milk stirring constantly over heat till it thickens to a sauce)
5. Add salmon and asparagus to white sauce to create mornay, stir in well.
6. pour salmon mixture in a layer over the top of the rice and peas.
7. sprinkle grated cheese over the top of the salmon to cover the surface.
8. sprinkle top with bread crumbs
9. put into moderate oven and bake for about 30 mins or until cheese has browned on top.
