Number of Servings: 6

Ingredients

    4 large potatoes, cubed
    1 large onion, shredded
    .5 large bell pepper, shredded
    4 oz. carrots, shredded
    24 oz Atlantic pollock filets
    6 tbsp lemon juice
    black pepper

Directions

Combine the potato, onion, pepper, and carrots in a large bowl; mix thoroughly. Cut the pollock filets into 4 oz. pieces, then tear off six sheets of aluminum foil.

Preheat the oven to 400 degrees F. Place the potato/vegetable mix on sheets of aluminum foil, leaving enough space around the edges to allow it to be folded shut. Place a piece of pollock on top of the mix, drizzle with 1 tbsp of lemon juice, and sprinkle with black pepper. Repeat for all packets, then fold them together.

Place the packets on a cooking rack and put in the oven; let them cook for about 15 minutes before taking one and checking the fish for doneness. It should flake easily. Reseal the packet and allow to cook for an additional five minutes. Serve immediately.

Other vegetables may be added or substituted as desired.
