Introduction

Easy and delicious hummus recipe. This is a combination of a couple of different recipes that I have tried for hummus. Hope you enjoy it as much as we do!

Number of Servings: 14

Ingredients

    2 cans Chick peas, drained (reserve 1/4 cup liquid)
    1 8 oz jar roasted red peppers, drained
    3 or 4 cloves garlic
    3 T. tahini
    1 T. olive oil
    6 T. lemon juice (usually about 2 lemons)
    1tsp. ground cumin
    1tsp ground corriander
    1tsp salt
    1 tsp pepper

Directions

Drain the chick peas, reserving 1/4 cup of the liquid. Drain roasted red peppers, place peas, peppers, and all remaining ingredients in food processor or blender. Pulse until all mixed, and smooth consistancy.

This is better if made the night before you plan to eat it to let the flavors blend.

Serve with celery and carrot sticks, and pita wedges.

Serving size is 1/4 cup. Makes about 14 servings.

I use this as a sandwich spread on pita and add romaine, tomato, red onion, cucumbers and feta cheese.
