Introduction
Homemade lo-cal muffins, using my own home made apple butter as the butter replacement (it's just very reduced stewed and blended apples, with maybe some cinnamon and nutmeg added). And a banana for the classic main flavor. Generic brans brans seem to have a lot less sugar than All Bran, so that's what I use. Ingredients

Milk, 2%, 0.25 cup
Egg, fresh, 1 medium
Cinnamon, ground, 0.50 tsp
Vanilla Extract, 0.25 tsp
Baking Soda, 0.5 tsp
Flour, whole grain, 0.50 cup
Splenda No Calorie Sweetener, 12 tsp
Just Bran (like All Bran), 15 gram(s) (remove)
Apple Butter (Kev's Home made), 50 gram
Banana - 1 small, chopped or mashed depending on your preference (approx 100g)
Directions
1. Mix dry ingredients in a bowl
2. Mix wet ingredients in a bowl (including banana)
3. Combine the two together - mix well
4. Scoop into muffin cups
5. Bake at pre-heated 180 for 15 mins
6. Allow to cool a bit before eating or they will stick to the paper cups.
