Ingredients

    1/4 cup brown sugar(1/2 cup if you like a sweeter muffin)
    1 cup GF flour
    3/4 tsp xanthan gum
    6 tbsp. Trader Joe's Flaxseed PB
    1 cup ripe bananas, mashed
    1 large egg white
    1/2 tsp salt
    1 tsp baking powder
    1/2 tsp baking soda
    non-stick cooking spray

Directions

1. Preheat oven to 350 degrees. Coat a 12-cup muffin tin with cooking spray.
2. In a large mixing bowl, mix the brown sugar with the peanut butter, the mashed banana, and the egg white.
3. In a separate bowl, mix the flour, baking powder, baking soda, and salt. Add to the bowl with the peanut butter mixture and stir just to COMBINE.
4. Divide the batter evenly among the muffin tins and bake until lightly browned and a toothpick comes out clean when inserted into the center, 15 to 19 minutes. Place on a rack to cool.
