Introduction

Ingredients

    3 cups thinly sliced matchsticks of red cabbage, 2 cups matchsticks of jicama, 1 cup matchsticks baby carrots, tossed with 3 tbsp chopped cilantro, chunks of a whole ruby red grapefruit, 4 tbsp seasoned rice vinegar, 1 tbsp fresh lemon juice, and finished with glazed pecans.

Directions

Makes 5 servings. Cut all veggies into matchstick pieces, toss with chopped cilantro, seasoned rice vinegar, chunks of grapefruit, and top with pieces of glazed pecans.

    Incredible!
    Great taste combination. Next time I would grate the cabbage to have smaller pieces. Even the non-dieters liked it. I didn't add the pecans. - 4/14/07

    I live in a small town, and if I asked the produce clerk for "jicama", he'd probably wonder if I'd sneezed. LOL!! How I wish I still lived in the city near my favorite little produce market! I'd make this for lunch! - 4/11/07
