Introduction

Ingredients

    1 lb. bacon slices
    1 medium apple (Braeburn, Gala, Fuji are all good to use), peeled & diced
    2 tablespoons sugar
    1 1/2 cups Bisquick
    1 1/2 cups skim milk
    4 eggs
    2 cups shredded Cheddar cheese (experimenting with other sharp cheeses is fun)

Directions

To make one 8" x 11" (2 qt.) glass casserole:

1 lb. bacon slices
1 medium apple (Braeburn, Gala, Fuji are all good to use), peeled & diced (I don't peel my apples)
2 tablespoons sugar
1 1/2 cups Bisquick
1 1/2 cups milk (I use skim)
4 eggs
2 cups shredded Cheddar cheese (experimenting with other sharp cheeses is fun)

Directions:

coat glass casserole with cooking spray
cook and pat bacon slices dry; crumble into bite size pieces
mix diced apples with sugar, and spread onto bottom of casserole
mix Bisquick, milk and eggs together until smooth, and then pour onto apples
layer 1 cup of the shredded cheese followed by 1/2 of the cooked bacon on top of casserole; repeat with the remaining cheese and bacon
bake at 375 degrees for 30 to 35 minutes until an inserted knife comes out clean.

    Very Good
    I will make this again...more for the ease than the taste. It has few ingredients and most things I had on hand. You can "lighten" it up if you feel there are too many calories/fat. I felt it was a little bland but my colleagues LOVED it. - 6/17/10

    Very Nice! I used turkey bacon and I may add one more apple next time. The kids loved it so I will make again. - 8/6/09
