Ingredients

2 teaspoon olive oil
8 ounces lean ground beef
3 cups yellow onions, peeled and chopped
4 cups broccoli florets, washed
4 cups button mushrooms, washed, dried, and thinly sliced
2 ounces reduced-fat Swiss cheese; shredded
Directions
HEAT oil in a nonstick sauté pan or wok over medium-high heat. If using tofu, remove from wrapping, drain, and crumble.
ADD ground beef and cook till no longer pink.
ADD onions, broccoli, and mushrooms. Reduce heat to medium and stir-fry, stirring often, until vegetables are tender, about 15 minutes.
STIR in cheese and heat until melted, about 1 minute.
