Ingredients

Dough:
2 cups of Whole Wheat Flour
2 tbsp nutrional yeast flakes
1/2 tsp sea salt
1 tbsp dried oregano
1 tbsp dried basil
4 tbsp earth balance buttery spread
5 tbsp olive oil
1/3 cup of cold water
Filling:
10 tsp Ener-G Egg replacer
5 tbsp warm water
1 cup Quorn Grounds
1 tbsp Nutrional yeast Flakes
1 cup Almond Breeze Original
1 cup cooked spinach
Pepper to taste
1 tsp Cayanne Pepper
2.5 oz Vegan Gourmet Nacho Cheese
Directions
Dough:
Preheat oven to 400 degrees. In a bowl mix all the dough ingredients except the water, Mix until "just mixed" and then slowly add water while stiring. Knead dough only for a few minutes, then flatten and roll out.
I used my pampered chef mini muffin pan (24 slots), I cut out disks that fit into each mini muffin slot and set aside for filling.
Filling:
MIx all ingredients together and stir well. Then pour 1 tbsp of it into each little mini muffin slot. Place in oven and cook for 20 mins.
3 mini "pie cups" per serving
