Ingredients

    1/2 cup each shredded:

    romaine lettuce
    fresh spinach
    red bell pepper
    yellow bell pepper
    red cabbage
    carrot

    1/4 cup chopped red onion

    Dressing: 1 Tbsp extra virgin olive oil, 1 Tbsp Balsamic Vinegar, 1/4 dijon mustard, and a dash of salt and pepper to taste.

Directions

In a large bowl, add all of the vegetables, including the onion. Mix the dressing and toss thoroughly for about 1 minute.
