Ingredients

Basil - 2 tbsp
Salt - 1 tsp
Onion - 1/4 chopped
Garlic - 3 cloves
Red ripe tomatoes - 3 medium
Zuccini - 3 slices
Mushroom - 1 large
Bell Peppers - 2.5 large
EVOO - 2 tbsp
Jalapeno Pepper - .25 pepper
Can of stewed tomatoes
Tomato Soup - .50 can - (depends on how thick you want sauce)
Feel free to add more veggies and spices this is not an exact science. These were my veggies on hand.
Directions
Panfry or grill the peppers, zuccini, mushrooms until done. Set aside to cool.
Add oil to hot frying pan, and sautee the chopped onions, garlic and jalapeno peppers. Reduce heat to medium and add the fresh chopped tomatoes and stewed tomatoes (will require 8 fresh tomatoes if you do not wish to add the can of stewed tomatoes). Place lid on frying pan after squishing tomatoes and adding salt. In a blender or food processor add the grilled vegetables till they are desired chunkyness. Once tomatoes have reduced and are looking like a sauce add the blended vegetables and basil. Place lid on frying pan again to let the flavours mingle. Done. makes 6 servings of approximately 1/2 cup each.
