Ingredients

2.5 tbsp. extra-virgin olive oil
1.5 tbsp. fresh lemon juice
1 tsp. kosher salt
.5 tsp. Tabasco
.25 tsp. freshly ground pepper
4-lbs. seedless watermelon cut into 1 1/2-inch chunks, chilled.
1 c. crumbled feta cheese
2/3 c. pitted kalamata olives (coarsely chopped)
.5 small sweet onion - diced
.5 c. coarsely choped mint leaves
Directions
In a large bowl, whisk the oil, lemon juice, salt, Tabasco, and pepper. Add the watermelon, feta, olives, and onion and toss gently. Garnish with the mint.
