Ingredients

    * Parmesan Cheese, grated, 2 tbsp
    * Milk, 2%, 0.40 cup
    * Egg, fresh, 1 large
    * Nutmeg, ground, 0.12 tsp
    * Pepper, black, 0.25 tbsp
    * Rice Chex Cereal, 0.50 cup
    * Onions, raw, 1 medium (2-1/2" dia)
    * Turkey, Ground turkey, 93% lean, 16 oz
    * Lea & Perrins, Worcestershire Sauce, 2 tsp
    * *Flax Seed, 2 tbsp
    * Extra Virgin Olive Oil, 0.33 tbsp
    * Heinz Organic Ketchup, 3 tbsp
    * Morton Light Salt, 0.50 tsp
    * *Dole Baby Spinach, 6 oz (1 bag)
    * Instant, Quick, and Regular Oats Cereal, .25 cup, dry
    * Soy sauce (tamari), .5 tsp

Directions

1. Preheat oven to 375 degrees.

2. Place cereal, flax seeds and oatmeal in a large bowl, and pour milk over them.


3. Heat 1 teaspoon oil in a large skillet, preferably nonstick, over medium heat. Add onion and cook, stirring occasionally, until softened and golden, about 5 minutes. Add spinach, and stir until just wilted, about 30 seconds. Transfer to bowl with soaked crumbs. Add the turkey, cheese, egg, salt, pepper and nutmeg. Combine the mixture with your hands until well mixed; it will be quite wet.

4. Pack some of the mixture into a 1-cup dry measuring cup. Invert the cup onto a rimmed baking sheet, gently shaking the cup to release it. Gently pat the mound to smooth its shape. Repeat with remaining mixture. Bake mini meatloaves until cooked through and golden, about 40 minutes. Should make about 5 meatloaves

5. While the meatloaves are cooking, make the glaze: In a small bowl combine the ketchup, Worcestershire sauce and soy sauce. Brush over meatloaves.
