These easy squares make a tasty meal, and the left-overs can be frozen and reheated easily. Serve with a side salad or some steamed veggies! Ingredients

1 pkg frozen spinach (thawed, drained and chopped)
3 eggs
6 tbsp flour
1 c shredded sharp cheddar cheese (I use low-fat)
1 pkg cottage cheese (2 cups)
1/2 tsp nutmeg (optional)
salt and pepper (optional)
1 tbsp Parmesan (for the top)
Directions
Pre-heat the oven to 350F.
Thaw and squeeze the spinach until it no longer gives off water.
In a mixing bowl, beat the eggs and add in the flour until the texture is uniform. Mix in all the rest of the ingredients except the Parmesan.
Lightly grease and flour an 8 X 8 pan. Pour in the mixture and top with Parmesan. Cook at 350F for 45 minutes, or until fully cooked in the middle.
Let sit for 10 minutes before serving. (Hint: This 10 minutes gives you the time to prepare your salad or steamed veggies!)
We cut the pan into 4 equal squares. If you prefer smaller servings, or have young children, you can easily serve 6.
