Ingredients

1 large package of spinach (16 oz) OR 1.5 (10 oz) packages
1 tbsp olive oil
2 cloves garlic
3/4 cup shredded cheddar cheese
8 large eggs
2 tsp soft margarine
Directions
Preheat oven to 375.
1. Heat spinach in microwave for 3 minutes
2. Heat olive oil and mince garlic. Add to olive oil and saute until heated through.
3. Add spinach and cook until heated through (about 5 minutes).
4. Grease muffin pan with 2 tsp of butter or spray with cooking spray.
5. Whisk eggs until frothy and nearly double in sized.
6. Put spinach in pan and add a small amount of cheese - cups should be about 2/3 cup full.
7. Pour eggs over top of spinach and cheese.
8. Bake in oven at 375 for 30 minutes.
Makes 12 1 piece servings.
