Ingredients
-
-1 cup shredded iceberg lettuce
-1 medium tomato
-0.5 cup cucumber
-1 medium red onion
-1tbsp balsamic vinegar
-Non stick cooking spray
-5oz skinless chicken breast
-fajita spice, or other hot spice mix
-1oz low fat cheese (brie or feta will be best for this)
Directions
-Place shredded lettuce on a small plate.
-Slice tomatoes, red onion, cucumber and arrange on top of the lettuce.
-Place whole basil leaves onto salad.
-Cut cheese into small cubes and scatter over the salad.
-Dice chicken into 1" cubes and rub in the spice mix.
-heat some cooking spray in a pan then fry the chicken for 10 minutes or until cooked through.
-Place the chicken onto the salad and drizzle on the balsamic vinegar.
-Eat while still warm or keep in a sealed container for lunch.
