Ingredients

    Ingredients:
    1-1/5 cups Uncle Ben's Whole Grain Parboiled Brown Rice
    1-1/2 cups Uncle Ben's Original Enriched Parboiled Long Grain White Rice
    2 large Eggs
    1 Egg white
    2 Tbsp Olive Oil (light, virgin)
    1-1/4 cup chopped Onions
    1 lb Pork chops (boneless, about 4)
    2 packets Fried Rice Seasoning Mix
    16 oz bag PictSweet Peas and Carrots
    4 Tbsp La Choy Lite Soy Sauce

Directions

Cook rice(s) according to directions (I use a rice cooker) Let cool.
"Scramble" eggs until just loses it's gloss, set aside.
Cut pork chops into small, bite sized pieces. Heat skillet, add pork and cook until white (cooked throughout) Move meat to a dish. In same pan pour in olive oil and "stir fry" (that just means to heat!) cooled rice with onion until onion just loses it's "crunch".
Mix in Fried Rice Spice, add soy sauce and mix until well blended. Add in pork & eggs, gently stir in peas & carrots.
Serving size = 2 cups
