Introduction

I adapted this directly from an 18th century recipe that was made in a skillet. I think of it as a gluten-free version of apple pie that you can just spoon out. Best served warm. Ingredients

    4 eggs or egg substitute (nutr. info based on substitute)
    3 medium baking apples
    1/2 cup sugar (less if you want it less sweet)
    1 cup skim milk (you can use 2% or whole)
    1 tsp vanilla
    1/2 tsp nutmeg
    Enough cinnamon to coat apple slices (1-2 Tbsp, or if you want it sweeter, use 2 Tbsp sugar and 1/4 tsp cinnamon)

Directions

Preheat oven to 325 F.

Pare apples and cut into thin slices. Coat with cinnamon or cinnamon sugar.

Beat eggs to a froth, add sugar and vanilla. Beat well. Add milk. Mix well.

Grease casserole dish. Line bottom with half the apple slices. Pour 1/2 egg mixture over top. Add another layer of the rest of the apple slices. Pour in rest of egg mixture. Sprinkle nutmeg on top.

Bake for 45-50 minutes, or until custard sets.

Makes 6 servings (small bowls).
