Introduction

I used large shells to create my own pierogies so I can enjoy a favorite dish with less guilt! I used large shells to create my own pierogies so I can enjoy a favorite dish with less guilt!
Number of Servings: 8

Ingredients

    1 box large shell pasta
    3 cups mashed potatoes
    4 oz neufatchel cheese
    1 cup low fat cottage cheese
    1.5 cups lowfat sour cream
    .5 cup low fat cheddar cheese
    1 cup sliced onions
    4 tbs EV olive oil
    salt and pepper to taste

Directions

Cook shells according to package, drain and cool. Mix potatoes, neufatchel cheese, cottage cheese, and cheddar cheese. Use a small cookie scoop or tablespoon to fill shells with mixture. Place in baking dish sprayed with Pam. Top with sour cream, bake 350 degrees for 25 minutes. Saute onions until soft in oil. Pour over the pierogies and sour cream and bake 5 more minutes.
