Ingredients

3 chicken sausages (approx. 1 lb), chopped
6 oz boneless, skinless chicken breasts, chopped
1 large can diced tomatoes, no salt added
2 tsp minced garlic
1 C celery, diced
1 C onion, diced
1 C bell pepper, red, diced
1 C bell pepper, yellow, diced
1 C spinach, chopped
1 tsp Mrs. Dash (no salt) Cajun seasoning
1 Tbsp oregano
1 Tbsp basil
1 Tbsp thyme
2 tsp tobasco sauce
Directions
1. Cook chicken and sausage, put aside.
2. Saute the garlic, celery, onion, spinach and peppers until just cooked.
3. Stir in the tomatoes (do not drain), broth and seasoning. Cover and simmer for 10-15 minutes.
4. Add chicken and sausage and simmer until heated through.
Serve over rice.
