Introduction

Had this combo at the infamous PI Pizzaria in St. Louis and was determined to come up with my own healthier version. I was also feeling rather adventurous to make this on the grill... wow! Especially if you are able to have wood chips in the fire. Double wow!

The crust is hearty (similar dough to soda biscuit) and crisp. I came up with it in desperation when I realized my Pillsbury pizza dough was missing from the fridge!

Number of Servings: 4

Ingredients

    1 C flour
    1/2 TBS baking powder
    1/2 tsp salt
    1/8 C shortening
    3/8 C water
    **********
    3 heaping tsp prepared pesto
    1/3 C rough diced artichoke hearts
    2 oz fresh baby mozzarella sliced thin
    1/3 C finely diced onion
    2 oz cooked/grilled chicken breast diced (I used leftover grilled)
    approx 10 fresh basil leaves

Directions

Cut and mix together pizza crust ingredients; turn out onto lightly floured surface and gentily knead into a ball.
Roll out to 12" diameter (roughly).
Prebake approx 8 mins at about 400 deg. (I baked on a pizza stone prepped with cornmeal in a very hot covered grill)

Spread pesto evenly over crust and evenly distribute remaining ingredients.
Return to oven/grill for additional 8-10 mins.
