Ingredients

1 lb Chicken Breast (frozen is ok)
1 11 oz jar of chunky salsa (Newman's Own Medium is my favorite)
1 15 .5 oz can of Garbanzo Beans (Chick peas)
1 15.5 oz can of Black Beans
10 drop or so of Tabasco sauce (to taste)
    Salt and pepper (to taste)

Directions

This is very simple. Just put all ingredients in a crockpot, chicken on the bottom, everything else dumped on top. Set to low, and cook for about 7 hours. When it's ready, break the chicken apart with a fork and mix together. Serve over 1/2 cup of rice or pasta for a quick but healthy meal. (Note: rice and/or pasta not included in calorie count.)

I served it with tortillas and veggie extras. This is a PERFECT dump-and-go crock pot meal. I used frozen chicken, and it turned out great! - 5/30/12
