Ingredients
-
1 lb. Cooked Chicken
1 c. Water
1 pkg. Kroger Taco Seasoning (Reduced Sodium) Mix
1 c. Pace Mild Picante Sauce
6 Kroger Wheat Tortillas
1 16 oz. Can of Kroger Fat Free Refried Beans
4 c. (16 oz. pkg.) Kroger Mexican Style Cheese
Directions
Cook chicken and dice it (I season it with garlic salt, pepper, and basil and broil it in the toaster oven). Or, if you don't want the added cook/prep time with the chicken (it's about 40 minutes or so when I broil it), use some microwavable Tyson chicken strips.
Next, add to the chicken the water and taco seasoning and bring to a boil in a skillet on the stove. Reduce heat, and simmer uncovered for 2 minutes.
Meanwhile, spray a 9X13 baking dish with cooking spray. Place two tortillas in the dish and layer with half of the refried beans. Place half of the chicken mixture over the beans. Next, sprinkle 1/3 of the package of cheese. Repeat the layers. Top with remaining tortillas and cheese. Cover and bake at 350 degrees for 25-30 minutes or until heated through and cheese is melted. Cut the entree down the center and then four times across.
