Ingredients

    4 cups left over long grain brown rice.
    2 whole eggs or 4 egg whites scrambled
    1 cup leftover cauliflower mashed and added to eggs
    1 1/2 cups frozen peas
    3 cloves garlic, minced
    2 Tbsp Peanut Oil
    2-3 Tbsp soy sauce
    6 oz leftover chicken/pork/beef/shrimp

Directions

Mash up steamed cauliflower and whisk into the eggs and scramble, cook in large skillet with a little peanut oil and garlic. Add rice and leftover chicken with a little more oil and soysauce, cook until heated through Add the frozen peas the last 3-5 minutes and serve.
