    1 Cup Quinoa Grain Organic
    1.5 cups Parsley minced
    1 large Cucumber peeled and diced
    2 cup cherry tomatoes sliced in half
    1 tsp salt
    3 cloves garlic minced
    12-18 Mint Leaves minced
    1/2 cup diced Scallions
    1/4 cup Olive Oil
    Juice of 2 lemons


Rinse Quinoa then add 1 cup to 2 cups of boiling water. Simmer 25-30 minutes or until water is absorbed. (Follow package directions).

While Quinoa is cooking dice up all your veggies. Once Quinoa is done cooking and has cooled a bit combine with veggies. Pour lemon juice and olive oil. Refrigerate an hour and enjoy.
