Ingredients

    2 Cup Flour
    1/2 Cup splenda
    1tsp baking soda
    1tsp baking powder
    1/4 tsp salt
    2 Tbsp poppy seeds
    1 egg beaten
    1/2 cup apple sauce
    2 tbsp lemon juice
    2 tsp lemon extract
    1 1/4 C Water

Directions

Mix dry ingredients
Mix wet ingredients
Add wet ingredients to dry mix.

Bake at 400 for 14 min.

Makes 12 muffins

    I felt it could have used just a hair more lemon flavor and my taste testers agreed. They didn't puff up as much as I would have liked, but overall, they were very good and with a little tweaking, they'll be great. - 5/29/10
