Introduction

Very filling, and contains "good" fat and plenty of protein. Very filling, and contains "good" fat and plenty of protein.

Ingredients

    3/4 Cup Whole Wheat Flour
    1/2 Cup Quick Cooking Oats
    3/8 Cup Wheat Bran
    1/8 cup Wheat Germ
    1 tsp Baking Powder
    2 rounded Tbl. Vegetable Protein Powder
    3 Very Ripe Medium Banana's
    1/2 Cup Skim/Non Fat Milk
    1/3 Cup Brown Sugar
    2 Eggs
    1/3 cup chopped Walnuts

Directions

Mix all Dry ingredients together, except sugar. In a seperate bowl, beat eggs, and sugar about 1 minute, beat in banana's but leave a little bit chunky, add in milk, mix well. Add wet to dry, stir in till well blended, but don't over stir, just until no lumps basically. Let mix sit for 5 mins then fold in chopped walnuts. Add to 12 lightly sprayed or lined muffin cups, Bake in preheated oven at 350 for 20-25 mins. Cool and enjoy.
