Introduction

Ingredients

    Spinach, canned, 2 cup (DO NOT drain)
    Onions, raw, .25 cup, chopped finely
    1 fresh artichoke, chopped
    1/3 less fat Philadelphia Cream Cheese, 12 tbsp
    Parmesan Cheese, grated, 1/3 cup
    Water, tap, 1 cup (8 fl oz) [do not add water if using only as a dip]
    Oregano, ground, 1 tsp
    Salt, 2 tsp
    Pepper, fresh ground black, 1 tbsp
    Lemon juice, 1 tbsp
    Non-stick cooking spray

Directions

First, spray a medium pot with the non-stick spray. Mince onion well and set aside. Peel the outer leaves of the artichoke until you get to the softer, less rigid ones (only maybe the first couple of layers of leaves). Take a very sharp knife (the artichoke is very tough) and cut the artichoke like you are slicing an onion. Cut the slices in half and then more if you wish to have smaller chunks. Next place garlic, onion, chopped artichoke, spinach, lemon juice, salt, pepper, oregano, water, Parmesan cheese, and cream cheese into the pot on medium heat. Once the mixture starts to bubble, reduce the heat to medium/low to low heat and let simmer for no more than 10 minutes. Serve immediately as a dip or over pasta. You may garnish with ripe, red tomatoes or crisp, fresh red pepper chunks. Delicious!
