Ingredients

Shrimp, raw, 8 oz peeled and deveined
2 Limes (Zest of one, Juice of Both)
Cilantro 3 tbsp chopped
9 Bibb Lettuce Leaves
1/2 Cup Light Sour Cream
1.5 cups cooked Long Grain Brown Rice
Chili powder, 1 tsp
2 Garlic Cloves
Directions
1. Cook the rice according to package directions (takes about 45 minutes if you use regular rice like I did).
2. Zest one lime into a medium bowl. Juice both limes into the bowl. Chop the cilantro and add to the bowl. Add salt and pepper to taste. Add the smrimp to the bowl and marinate for 30 minutes.
3. Mix together the sour cream and chili powder and set aside.
4. After shrimp has marinated, cook in a medium saute pan sprayed with cooking spray until pink. Set aside.
5. Arrange 3 lettuce leaves on each plate. Evenly divide the rice between the leaves (about 1/8 cup per leave). Evenly divide the sour cream between the leaves on top of the rice. Then, evenly divide the shrimp among the leaves.
Makes 3 servings, 3 lettuce cups per serving.
