    1 pre-made pie crust
    1 cup frozen chopped spinach
    1/2 cup chopped fresh mushrooms
    4 oz. reduced fat swiss cheese, cubed or shredded
    1/2 cup egg beaters
    1/3 cup egg beaters whites
    1/2 cup evaporated skim milk
    black and/or white pepper, to taste


Roll out pie crust into pie pan. Layer chopped spinach, chopped mushrooms and swiss cheese. Blend egg beaters, egg whites, evaporated skim mik and pepper in a blender & pour into pie crust.

Bake at 350 degrees for 45 minutes.
