Introduction

I made this in my ice cream maker using fresh blueberries. Next time I will try using fat free half and half and a Splenda blend to reduce the calories even more. Ingredients

    1/2 cup sugar
    2 cups blueberries
    1 Tbsp. lemon juice
    1/4 tsp. vanilla extract
    1/4 tsp. ground coriander
    pinch of salt
    2 cups half and half

Directions

Dissolve sugar in 1/4 cup water in a medium sauce pan over low heat. When sugar dissolves, add all ingredients but half and half. Cook over low heat, stirring occasionally, until berries begin to burst. Remove from heat and mash the berries. Cool to room temperature, then chill in the refrigerator. Then combine with the half and half very well. Put it into your ice cream maker, and mix until it's ready!

    This was delicious! I had only 1 cup of blueberries but that worked out fine...I'm sure with 2 cups it would be even better. I used a teaspoon of vanilla and omitted the corriander. This is creamy, just sweet enough and a very pretty lavendar color. Plus it's really quick and easy to make. - 6/26/10
