Ingredients

    1/2 c Parmesan Cheese
    15 Kalamata Olives
    1 c Fresh Mushrooms
    1/2 c Shredded Fat Free Mozzarella
    1 oz Red Wine
    3 Whole-Wheat 4" Pitas (I like Joseph's)
    1/2 c Organic Chunky Tomato Sauce
    1 1/2 tbsp Extra Virgin Olive Oil
    Sea Salt
    Pepper Grinder
    Oregano

Directions

Preheat Oven to 325.

Slice Pitas into halves. Take about 3/4 tsp of olive oil and brush it around the circumference of each pita half. Dash with sea salt. Put the pita halves into the toaster oven to make them crispier (otherwise they will just absorb the sauce and get soggy.

Meanwhile, place mushrooms in skillet, add red wine. Cook until soft and saturated.

Line up pita halve son cookie sheet. Spread 1 tbsp tomato sauce on each pita half. Add a heaping tbsp of mozzarella and parmesan to each pita half and even out. (It will total about 3 tbsp of cheese per pita half). Then add kalamata olives and mushrooms to each pita half. Grind pepper on top, sprinkle with oregano, and dash with sea salt. Place in oven for 10-12 minutes (until cheese is melted). Enjoy!

Note: I eat about 2-3 of the six pita halves for a meal. But you can eat just one as a yummy snack or appetizer.
