Ingredients

    4 boneless skinless chicken breasts
    2 cups water
    1 cup onion, chopped
    1 jalapeno pepper, chopped
    cilantro, about 4 tbsps chopped
    1/4 cup no salt added tomato sauce
    1 tsp each garlic and pepper
    2 cups shredded lettuce
    3 cups refried black beans
    12 tostada shells ( i use mission)

Directions

Thoroughly cook chicken in skillet. When it's done cut it into small pieces and put into a medium pot. Add onions, jalapenos, water, cilantro, tomato sauce and spices. Cook until the chicken is basically shredded and most of the liquid has evaporated. About 20 minutes. Spread about a 1/4 cup of beans on a shell, then about 1/4 cup of the chicken on top of that. Top with the lettuce. You can add sour cream, guacamole and salsa of course but that brings up all the nutritional values. 2 Tostadas per serving. Makes 6 servings.

    Very Good
    This was very very good. I only had 3 chicken breasts, so it was a bit soupy, but tasted delicious. - 7/24/09
