Introduction

Divine mashed potatoes, made healthier by including sweet potatoes (a pumpkin sidekick superfood) and soy milk (which also provides protein). I've never been a soy milk or sweet potato fan, but I'm addicted. Ingredients

    2 large sweet potatoes, peeled & cubed
    4-5 medium red potatoes, scrubbed, SKIN ON, & cubed
    Soy milk, 1/2-cup
    Butter, 2 T
    1/2-teaspoon black pepper

Directions

Peel and cube sweet potatoes. Scrub and cube red potatoes, leaving skin intact (more nutrients). Put all potatoes in boiling water for 10-15 minutes until starting to soften. DO NOT OVERCOOK potatoes. Drain potatoes, add butter and plain soy milk, black pepper and mash all (with potato masher or blender).
