Introduction

This snack is amazing and very fresh tasting! The recipe makes 20 servings because of the amount of granola that is made and is great for lunches. I eat it with 1c. lowfat vanilla yogurt and strawberries. This recipe makes a very large parfait and the serving size could even be cut down of you want to reduce calories even more. Ingredients

    -4 c. old fashion oats (not instant oats)
    -1/2 c. light brown sugar
    -1/2 tsp. salt
    -1/2 tsp. cinnamon
    -1/4 c. canola oil
    -1/4 c. honey
    -1 tsp vanilla
    -1 c. raisins


Directions

-Preheat the oven to 300 degrees.
-Combine the oats, brown sugar, salt, and cinnamon in a bowl. Mix thoroughly.
-Warm the oil and honey in a saucepan over the stove. Wisk in the vanilla. Pour contents over the oats mixture and mix thoroughly.
-Spread the granola in a deep dish (I used a disposable aluminum roasting pan) and place in the preheated oven. Bake for 40 minutes, but stir after 20 minutes, 30 minutes, and 40 minutes.
-Take the pan out of the oven and let it cool, stirring occassionally. Once it is cool, make sure large chunks are broken apart and mix in the raisins.
-Put yogurt in a bowl and top with 1/4 c. of granola. Dice a strawberry and add to the top of the parfait.
-Place the extra granola in an airtight container or ziplock for storage.

-This recipe makes 5 c. of granola (or 20, 1/4c. servings). The serving sizes are large, so feel free to reduce it if you would like.
