Introduction

Throw this together real quick at lunch time and it will be ready for dinner! Serve this with a salad on the side or just add more frozen veggies if you want to reduce the calories/increase the size per serving. This recipe is NOT for anyone watching their sodium as is- but you can make modifications to make it better (plain black beans, and plain frozen veggies would knock the sodium down a lot a ton, if I would have put it in first I would have done that, oops!). Ingredients

    Turkey sausage (2 big links)
    1 cup rice, uncooked
    1 can black beans (using seasoned ones adds flavor but also sodium)
    Half a white onion
    1 can cajun flavored veggies
    2 cups mixed veggies


Directions

Put the turkey sausage, beans, canned veggies, frozen veggies, and chopped onions in the crockpot on high. A few hours later, add the rice and 3 cups of water. Let cook for 6 hours on high.

Calorie count for the entire meal is about 1620. We eat this in 3 servings but if you're not as hungry you could easily split it into 4 or even 5 (especially if you add extra veggies).
