Ingredients

1c white rice
2c chicken broth
1/4c orange juice
1 lime juiced
2tb olive oil
1/4 c chopped cilantro
2 cloves minced garlic
1 tps sugar
salt to taste
pepper to taste
4 tilapia fillets
1c salsa
1 can black beans drained
1c pineapple chopped
2 limes sliced
Directions
Cook rice in chicken broth.
Preheat oven to 400.
Mix orange juice, juice from 1 lime, oil 2 tbls cilantro, garlic and sugar, season with salt and pepper to taste.
Marinade tilapia in marinade for 20 min, in refridgerator.
Stir together rice, salsa, beans, pineapple and remaining 2 tbls cilantro in a 2 or 3 qt baking dish.
Place tilapia on top of rice slice lime place on top of tilapia,
Cook in oven for 25 to 30 min.
