Ingredients

    6 Garlic cloves, peeled and halved
    8 Small Turnips, washed well and quartered
    4 Medium Kohlrabi, peeled and cut in large chunks
    5 Medium Beets, washed well and cut in large chunks
    4 Medium Onions, cut in quarters
    8 Medium Potatoes, cut in large chunks
    5 Medium Carrots, cut in large chunks
    1/3 Cup Olive Oil
    1 Tbsp Sea Salt
    1 Tbsp Black Pepper

Directions

Makes 15 1/2-cup servings
Preheat oven to 500 degrees
Add all ingredients to a roasting pan and toss well
Roast, stirring every 10-15 minutes to evenly caramelize vegetables.
