Ingredients

    1 cup diced Cantaloupe
    1 tablespoon chopped fresh Cilantro
2 1/2 teaspoons Cajun Seasoning Blend
4 Tilapia Filets (about 1 lb)
    Olive Oil-flavored cooking spray
    1 teaspoon salt

Directions

In a bowl combine cantaloupe, cilantro, lime juice and ½ teaspoon of Cajun Seasoning Blend (several to choose from in your market).

Lightly coat 4 Tilapia fillets (about 1 lb) with olive oil-flavored cooking spray and sprinkle with remainder of Cajun Seasoning Blend (2 teaspoons) and salt.

In large greased skillet over medium heat, cook fillets about 6 minutes or until fish flakes easily with a fork, turning once. Top fish with salsa mixture already made.
