Introduction

Ingredients

    3 # cooked & diced chicken breast
    3 Red delicious apples cored, chopped (do not peel)
    3 Yellow delicious apples cored, chopped (do not peel)
    3 stalks celery chopped
    1.5 cups grapes (halved)
    16 oz Low fat mayonaisse
    16 oz Low fat plain yogurt

Directions

Night before place a 3# bag of chicken breasts in crock pot with 1 cup water and sprinkle with Montreal Chicken seasoning. Cook overnight while you sleep. In morning, drain chicken and refrigerate for at least 1 hour. When cool, dice chicken.

In a large bowl, mix yogurt & mayonnaise till smooth. Add prepared chicken, fruit & celery. Transfer to serving bowl and refrigerate. Looks great in a glass bowl lined with Romaine lettuce leaves.

When guests arrive, set out with a bowl of cleaned lettuce leaves and small rolls. Recipe serves 12.
