Ingredients
-
8 oz canned pure pumpkin
2 egg whites
1 tbsp applesauce (or oil)
3/4 c packed brown sugar
1 1/2 c all purpose flour
3/4 c whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp pumpkin pie spice or cinnamon
1 tbsp Splenda (or white sugar)
Directions
Preheat oven to 425, and spray a baking sheet. Beat bananas, egg whites, applesauce (or oil) and brown sugar in large bowl. Add flours, baking powder, baking soda, and cinnamon or pumpkin pie spice. Mix until well blended.
Let stand for 5 minutes to let dough rise.
Scoop out heaping tablespoons and place on baking sheet equally spread apart. Take a buttered knife and finger to form donut holes in the center of each. Smooth edges of dough into a round donut as much as possible. It will be difficult as the dough is sticky. Sprinkle with 1 tbsp of Splenda or sugar.
Place in oven for 7-8 mins. at 425F. Make 12 donuts.

I hate to say these were not good. It was like something was missing and I triple checked everything. I pulled antoher recipe that added milk and vanilla. It changed the texture to a more donut like but still not impressed. Kids liked them better after adjusting but still not crazy about them. - 1/26/13
